		The scallop shell is generally used as a centrepiece for displaying shellfish at dinner parties and buffets. It is especially effective as a server for hors d'oevre. An open scallop shell made up from two shells joined at the hinge is also available to provide an even more impressive centre piece (£85 ex works+vat) The ice sculpture remains attractive and useable for many hours at normal room temperature.
